Nutrients, protein, vitamins, fat – it sounds like a good way to start your day. Breakfast or brunch, the already popular avocado egg toast brings has a lot of health benefits, not to mention its tastiness.
The egg in a hole toast
Usually the avocado egg toasts involve poached or sunny side up eggs, but I decided it is about time for something different: the egg in hole toast. Covered with the avocado paste and the tomatoes, the hidden egg comes as a surprise when you start slicing the bread. And we all love (nice) surprises.
Avocado is a magic fruit. Yes, it is a fruit. Besides the fact that it is tasty, accessible and versatile, it also represents a great source of potassium and vitamins: E, C, B6, K and the list can go on.
Considering the eggs, they are good source of high-quality protein, , vitamin D, B6, and minerals such as zinc and iron.
– 1 big egg or 2 small ones;
– 1 large piece of sourdough bread;
– 2 tbps of butter;
– ½ avocado or 1 small avocado;
– 3 cloves of garlic;
– 6 cherry tomatoes:
– 1 tsp of salt;
– a pinch of pepper
– a pinch of chili flakes
– a pinch of dry herbs (optional)
For the egg toast:
Using a cup or a circle form, cut a circle in the middle of the bread. Heat butter in the pan, put the slice of bread there and crack an egg into the hole of the bread. I used two eggs as they were very small. The important thing about the egg is to fill the whole hole of the bread, otherwise the egg will slip when turning the slice. Leave it there till the egg is cooked and turn from one side to another.
Add salt and pepper when done.
For the avocado paste:
Smash and avocado using a fork, then add a tbsp of olive oil, salt, pepper and lemon juice by taste.
For the tomatoes:
Heat some olive oil into a pan and add the cloves of smashed garlic. Add the cherry tomatoes cut into quarters and cook for 4 minutes on medium heat.
*** You can also used uncooked tomatoes, but I can make you sure that the butter and the smashed garlic bring a lot of flavor. ***
The final touch:
Spread the avocado paste over the egg toast then top it with tomatoes. Add chili flakes, salt, pepper and some dry herbs. You can also make small croutons from the circle piece of the bread that was cut out.
